- Tapioca is a good choice for thickening pie fillings, since it thickens at a lower temperature than cornstarch, remains stable when frozen, and imparts a glossy sheen.
- Also used to thicken soups, stews, and sauces.
Organic tapioca flour derives from the cassava plant as is taken from the root of the plant where no chemicals have been used to promote plant growth. Once the roots of the cassava plant have been harvested, it is then processed and ground to a flour. The flour resembles that of plain white flour and performs in the same ways as other wheat flours.
It has a subtly sweet taste in its natural form and is an asset to breadmaking for its natural way of adding a springy texture and crunchy outer layer - perfect for making crusty bread to accompany a warming bowl of soup!
